Mixed Berries Cake


Makes 8-10 pieces


  • 200gr all-purpose flour
  • 6gr baking powder
  • pinch of salt
  • 90gr + 60gr unsalted butter, room temperature
  • 170gr white sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs, room temperature
  • 120gr whole milk, room temperature
  • 1/2 teaspoon grated lemon zest
  • 65gr brown sugar
  • 3 cups red fruit (blackberries, strawberries, any berry will do!)


  1. Preheat oven to 175° C or 350° F. In a bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl, using a mixer, beat 6 tablespoons butter and white sugar on high until light and fluffy, about 6 minutes. Not sooner than that!🙂
  3. Beat in eggs, vanilla, and zest until combined.
  4. With mixer on low, add flour mixture in 2 additions, alternating with milk, and beat until combined.
  5. In a 25cm frying pan (which goes into oven, it mustn’t have plastic parts!), melt remaining 4 tablespoons butter over medium heat. Add brown sugar and cook, stirring, 30 seconds. Remove from heat and arrange berries evenly in skillet.
  6. Pour batter over berries and smooth top. Bake until cake is deep golden brown and a toothpick inserted in center comes out clean, 25 to 30 minutes (depending on oven), rotating halfway through.
  7. Let cake cool in skillet on a wire rack 5 minutes. Run a silicone spatula around edge and carefully invert cake onto a serving plate. Serve warm or at room temperature.
